I am always looking for easy ways to eat more protein grab and go style. I like carbs as much as the next guy…….but I stand my theory that an even bigger reason we all eat too many carbs is because they are convenient.
So…this awesome idea from Pinterest (which I am finally understanding is an incredible resource for ideas on about any subject!) is perfect!!
All you do is….
1. Preheat oven to 350*. (Don’t panic, even using the oven….it’s not really “cooking”)
2. Spray your muffin tin with non fat cooking spray.
3. Crack one egg in each muffin cup. No need to break the yolk. It will cook through.
4. Bake for about 20 minutes
The eggs come out crispy on top, like a fried egg and cooked through the yolk.
I let them cool, then package them up in small Rubbermaid containers. Each egg is 2 PointPlus values. I take 2 each morning with a piece of fruit for a 4 PointPlus value breakfast on the go.
