I saw this recipe on Facebook and made it yesterday. My husband and I were the only ones home for dinner and we both thought it was delicious. One of my daughters took it to school for lunch today, so the jury is still out on whether she likes it. I am glad I doubled the recipe, especially as we become more and more immersed in “soup” season. I think it will be easy to freeze and reheat in single portions. We made it at home tonight for dinner and everyone agreed…it’s going on our fall dinner rotation!!!! SO, SO, SO simple but absolutely delicious. We used Simply Potatoes and had it with grilled cheese sandwiches (3 PointPlus values each…two slices of Trader Joe’s sprouted whole wheat bread, 2 light Swiss Laughing Cow wedges and spray butter..grilled til toasty) and a side of green beans. Warm, filling and HEALTHY! I’ll take it!! Give it a try and let me know if you agree. I’m certain you will!
Crock Pot Cream of Potato Soup
Makes 8-10 one-cup servings (depending on the quantity of potatoes you choose*
3 PPV per one cup serving**
1 26-30 oz. bag* frozen hash browns (I used plain cubed)
2 14 oz. cans non-fat chicken broth
1 10-3/4 oz. can 98% fat free cream of chicken soup
1/4 cup chopped onion
1/4 tsp. pepper
1 8 oz. package fat free cream cheese (**original recipe called for low fat but I thought it was great with fat free and believe it saved .5 PPV per serving)
1 cup fat free milk
Combine first five (5)ingredients in crock pot and cook on high for one hour.
Stir and turn to low for another hour ( I let it go longer so the potatoes would be softer and the soup hotter).
Add cream cheese and cook another 1/2 hour or until cheese can be stirred into mixture.
Add milk and cook 10-15 minutes longer.
Garnish with chopped green onion and bacon bits. (The bacon bits would add points, of course. I think most bacon bits are only 1 PPV per tbsp. I used turkey bacon bits and know they are 1 PPV per tbsp. and I only needed 1/2 tbsp).
Variation: Use frozen country potatoes or potatoes O’Brien in place of the plain cubed hash browns).
