Black Bean Soup
(This was a Weight Watcher’s recipe)
1 med onion, chopped
29 oz chicken or vegetable broth
15.5 oz black beans, drained and rinsed
11 oz corn
15.5 oz tomatoes with green chilies
½ c uncooked white rice
Red pepper flakes (Optional)
Sauté onion in broth. Add all ingredients. Bring to boil. Cover and cut hear for 20 minutes until rice cooks.
6 servings. 3 pts each.
Note: If you use brown rice, cook for 50-60 minutes until rice cooks.
