Tasty Tuesday Fried Rice

OK—Be honest, doesn’t this look just like fried rice you’d order from a Chinese restaurant???   Well, it’s not!  Miracle of all miracles, first, it’s almost 100% veggies (=super low in Smart Points) and second, it’s so easy I made it myself in no time!

I’ve heard a lot about riced cauliflower but the process of “ricing” it myself was not appealing, so when a friend told me about the Trader Joes brand, I thought it was time I gave it a try and what better way to eat rice than fried??

Faux Fried Rice

Entire recipe =6 Smart Points

Servings: Depends on portion size…it’s your call!
1 Bag of riced cauliflower

1 1/2 C  Steamed mixed veggies

1 Egg & 2 Egg whites

1/3 C minced onion

1T Minced garlic

Using non fat cooking spray, sautéed the onion and garlic til soft.  Stir in cauliflower and continue stirring as it sautéed so that it doesn’t burn. It takes about 5 minutes for it to soften up like rice.

While that was going on, I put my steamer bag of mixed veggies in the microwave. I’m sure fresh veggies would work beautifully but I’m always in a time crunch, so this is more realistic for me.

Once the cauliflower looks like rice, add the steamed mixed veggies and crack the egg and egg whites in to the mixture. Stir until the egg is cooked through. I’ve also tried scrambling the egg separately and adding it to provide larger egg pieces. I like it that way best, but it’s faster and easier to just add the eggs directly to the skillet and mix them in. Either way is good—your choice!

When it’s cooked through, you’re all set!  Any protein could be easily added…shrimp or chicken are both on my list of things I want to try!   Just remember to adjust the Smart Points. I served it with soy sauce, of course!

Having a low Smart Point veggie on hand to fill up on makes a WORLD of difference in my eating, which is definitely reflected in my weight loss. Give this one a try and let me know what you think!!!

    This sounds great. I wonder how this is 6 points. The only points are the eggs, right?

      It is!! The egg is 2, the whites are 0, the 1.5 cup of mixed veggies is 4 Smart Points. This brings the grand total to 6 Smart Points for the entire dish. It make quite a bit so most can get at least 3 hearty servings or 4 side dish size servings out of it, no problem. Corn, peas and carrots are low in Smart Points but not “free” or zero. Hope this helps?

    Love this! I add soy sauce, sriracha and a teaspoon of toasted sesame oil…so good!

      Lisa! I should run all my ideas by you first so you can edit and jazz them up! (FYI to anyone reading this, Lisa is a professional chef and an amazing one!) I love Sriracha and I don’t have toasted sesame oil but it sounds worth getting. YUM! Great to hear from you!
