So Easy Caprese with FIG Balsamic


I originally posted my So Easy Caprese salad idea in 2011 and I laughed when I recently ran across the post because I am still eating it now, in 2020!  It’s a keeper, for sure! 

My life is quite different today compared to 9 years ago!! I have lot more time and I think because of that, I enjoy being in the kitchen far, far more than I used to! 

The SO Easy Caprese is an awesome way to make a quick dish but if you have more time, I now also really enjoy using the same ingredients and putting them on toothpicks as an appetizer or snack. 

One whole grape tomato, a piece of fresh basil, a medallion of string cheese then drizzle with my new, latest obsession….Black Mission Fig Balsamic Vinegar!! Or put serve the Black Mission Fig Balsamic in a dish and dip Either way….YUMMY!

Living in Central California I’ve quickly grown to love anything FIG and besides fresh figs, Fig Balsamic is at the top of my list!! I highly recommend it on vegetables and it’s heavenly on fish!!!

This SO Easy Caprese Salad is a great way to ssssssssssstretch out a 1 Smartpoint piece of string cheese into a much larger snack!  Besides being simple to assemble, it actually tastes better as a day or two after making , so it’s the perfect veggie-based salad to make and have on hand throughout the week.  I make it on Sundays or Mondays and store it in individual containers in my frig, so it’s easy to grab, throw in my cooler and GO. I like it as a side with my lunch (a girl can only eat so many canned green beans!) but, as with any salad, you could add a little protein and make it a meal, if you prefer.

So Easy Caprese

Makes 3 Generous Servings
1 SmartPoint each on Blue💙, Purple💜 and Green💚


-1 Container of grape tomatoes, washed and sliced in halves (O SmartPoints)

-2 Sticks of Light String Cheese (1 SmartPoint each)

2 Tablespoons of fatfree Zesty Italian Dressing or flavored Balsamic Vinegar……my absolute fav being Fig Balsamic Vinegar !!

(also 1 SmartPoint)

-FRESH basil (if at all possible!)

-Sea salt & black pepper to taste


-Dice string cheese into medallions. It’s surprising how many pieces you can get out of two sticks of string cheese!

-Add halved tomatoes, Italian dressing or balsamic and toss. Sprinkle with basil, sea salt and black pepper to taste.

    this looks soooo yummy. Have you discovered Balsamic Glaze? I haven’t checked the points, but it adds a really nice little something on grilled chicken, vegies, etc.

      I’ve made my own, believe it or not!! Took a long time on the stove…would be easier to buy it! What brand do you get??
