Tasty Tuesday~ Ruthie’s Zero Smartpoint Muffins!

Hello there!

This is an amazing recipe came from Ruth, a lifetime WW member, in Madera, California. She’s on the WW Purple plan and came up with this recipe to satisfy her craving for dessert in the evenings. After perfecting the recipe, she very kindly shared it with our workshop.  The recipe is at the bottom of this post and as you will see…besides being delicious, the real hook to these muffins is their low, low SmartPoint values!!  I also am on the Purple plan but I have checked and re checked the SmartPoints values on Blue and Green listed below.  Feel free to put the recipe in your WW app as a saved recipe, that way if you eat more than what I have listed (and track it) or you change plans, the app will update the SmartPoints accordingly.  There are not many ingredients and if this recipe becomes a staple in your cooking rotation, it’s worth the couple minutes it takes.  ENJOY!

Purple Plan ~ 1 Muffin = ZERO SmartPoints/ Up to 4 muffins = 1 SmartPoint

Blue Plan ~ 1 Muffin = 1 SmartPoints/2 Muffins = 2 SmartPoints

Green Plan ~ 1 Muffin = 2 SmartPoints/ 2 Muffins = 3 SmartPoints (eat one get one free…lol!)

Since we’ve been sheltering in place and I’m not seeing WW members and staff everyday, I have been trying to use WW Connect to stay “connected” to our community. For anyone not familiar, Connect is a social media feature on the WW app. It’s set up very similar to Facebook, so it’s easy to use. The big difference between Connect and typical social media is that it’s only accessible to WW members. There are thousands of people on it and it’s really inspiring. In the past, I haven’t posted often but I really enjoy reading other people’s posts from all over the country.

I’ve gotten so many awesome tips from others who so generously share that I felt I should also try to contribute now that I have the time.

So after making these muffins and being very pleased with their yumminess, I was really excited to share the recipe on Connect. Finally!! I have something to post that people are really going to love! YES!

So, I put it out there for WW members across the US to see……and I accidentally left out the can of crushed pineapple🤦🏻‍♀️. Apparently when I cut and paste, I cut out the can of crushed pineapple and didn’t realize it. How embarrassing! It’s pretty much a staple in the recipe!

In my defense, I did receive a message from someone who made them sans the pineapple and she kindly said they were still good! I went into Connect and corrected it, but I am not sure where all it has been shared, etc. Like I tell my kids….once it’s on social media, it’s out there for good! Sooooo…if you see a similar recipe that doesn’t call for pineapple…..it’s most likely a mistake! Hahaha! Especially if it is posted by a WW Coach with the username: Rubyruns26.2

That would be me. Oooopppps! Well…..I tried and my intentions were good!

Hope everyone is hanging in there and prioritizing some of this extra time for self care. We all need to be at our best to help each other! A great way to give ourselves a boost is by attending WW virtual workshops. WW members can attend virtual workshops anywhere in the country. So fun to “travel” around with no plane tickets needed!!!

Ruth’s 0 SmartPoints Muffins On Purple🟣

Purple Plan ~ 1 Muffin = ZERO SmartPoints/ Up to 4 muffins = 1 SmartPoint

Blue Plan ~ 1 Muffin = 1 SmartPoints/2 Muffins = 2 SmartPoints

Green Plan ~ 1 Muffin = 2 SmartPoints/ 2 Muffins = 3 SmartPoints (eat one get one free…lol!)

Yields 20 Muffins


3 ripe bananas, mashed

1 20oz can of crushed pineapple (in juice, not syrup) drained

3 eggs

2 Cups Old Fashioned Oats

2 Heaping Tablespoons Brown Sugar

1 Tablespoon Cinnamon

1 teaspoon Salt

2 Tablespoons vanilla

Beat eggs, stir in mashed bananas along with remaining ingredients. Bake at 350* for 30 minutes. (Double check to be sure they’re done in the middle)

Refrigerate leftovers in an air tight container. Mine last several days and taste even better a day or two after being in refrigerator.  Sometimes I add a little zero SmartPoint sugar-free maple syrup to the batter for extra sweetness.  Also awesome with Lily’s chocolate chips added…..just be sure to throw in recipe builder to count the SmartPoints.  Enjoy!

    My whole family ate these up. Thanks for the quarantine recipe as I had all the ingredients at home. My youngest thought they were apple muffins and I wasn’t going to correct her.

      That’s great!!! So glad you all enjoyed them! I’ve been making a batch once week or so. I think they get more sweet the longer they are in frig. So good for an after dinner treat!

    Hi Terra, these sound delicious! What size can of pineapple do you use for these muffins?

      Hi Pam…I used a 20oz can of crushed pineapple, drained. Watch the baking time….some people have commented they needed to leave them in a little longer than 25 minutes. My husband is eating them for breakfast right now! Haha!
