Last Saturday night, Darin and I decided to make a nice dinner and eat in the dining room. We typically don’t use the dining room when it’s just us, but going on 3 weeks of sheltering in place, we needed a change of scenery from the kitchen and tv!! Shaking up the routine a bit turned out to be a lot of fun!
I’ve made a non negotiable commitment to myself to use this unique time/pause to work on my own WW program and get my weight back to where I’m most comfortable. I can control very little of what’s going on out there or when my boys will be able to visit next, but I CAN control what I do with myself and this rare opportunity to have so much time at home. So although having a stay home “date night” sounded fun, I was not going to let it derail me from my plan. I was determined to have an awesome meal, with great wine AND not go over my SmartPoints! Mission accomplished, I’m pleased to share!
I concocted the twice baked potato recipe below from bits and pieces of traditional twice baked potato recipes I found online. Both Darin and I really enjoyed them! And that’s very fortunate because when I used 3 baked potatoes, I was not thinking it was really 6 servings, rather than 3! With only 2 of us in the house, we have had some nice twice baked leftovers in the days following!
I also want to note…I prefer to use fat free cottage cheese in place of the fat free, plain Greek yogurt. It works really well for this recipe, but it adds 1 SmartPoint per serving on the Blue and Green Plans. Because fat free cottage cheese is a zero SmartPoint food on purple, on that plan, the Smartpoints value of these do not change if you choose to use fat free cottage cheese. The fatfree, Greek yogurt version is very good, but since I am on the purple plan and it doesn’t add any SmartPoints, I went the cottage cheese route this time!

Terra’s Twice Baked Potatoes
Yields 6 Servings
1 SmartPoint each ~ WW Purple Plan
3 SmartPoints each ~ WW Blue Plan
4 SmartPoints each ~ WW Green Plan
3 Medium Baked Potatoes
1 Cup of Fat Free, Plain Greek Yogurt
2 Cups Steamed Broccoli
1 Packet of Ranch Seasoning
1.5 Cups of Fat Free Shredded Cheddar Cheese
Cut each baked potato in half. Gently scoop out the center, leaving the skin intact and enough of the pulp to form a relatively sturdy “boat”.
Mix baked potato pulp, fat free Greek yogurt and Ranch seasoning packet until fully blended. I used my Mix Master, which made it quite easy. I’m sure a hand mixer would work just fine. After the mixture is relatively smooth, stir in the steamed broccoli. I cut the broccoli fairly small before I steamed it. I added it and continued to mix with the Mix Master.
Next, stuff each potato half as full as it will allow. I put all 6 potato halves in a Pyrex to help hold them together. Sprinkle each potato half evenly with shredded cheese.
COVER the potatoes with foil and heat in the oven until warm….which for me was about 20 minutes on 350*. Once the potatoes are heated through, remove the foil to let the cheese brown up for about 5 more minutes.
