The year 2020 will forever be remembered for many, many things for all of us. One of the lighter hearted memories, yet extremely impactful for my family, will be that it was the year Darin and I broke our habit of constantly eating out. In the “old days” we thought we didn’t have time to cook and dining out seemed far easier and way more fun than coming home and going to all the work of preparing a meal.
Fast forward to now, nearly 7 months of living through a worldwide pandemic, creating meals at home and making them taste spectacular has become one of my biggest sources of enjoyment, excitement and FUN! Identifying our favorite restaurant foods and remaking them in ways that taste amazing AND work within my Daily and Weekly Smartpoints budget fuels my creative side and helps me to slow down and live in the moment. A skill that’s always been a challenge. Not to mention how much my Apple Watch loves all the standing I do while working in the kitchen! Close those rings, baby!!
I’m still in awe I’ve dropped a total of 19 pounds this year, putting me under my WW goal weight with a very nice cushion. All of you Lifetime members know how we LOVE to have that cushion!!! The thing is, it’s not just me. ANYONE can do this and MANY besides me have and are! Log onto one of the 3 virtual workshops I coach today (Friday 8am, 10am and 1215pm Pacific time…add two hours to figure out Central time) and see for yourself!!! It’s so exciting!!! And do-able!!
Weight loss never came easy to me before….this is about more than just what one eats. This is shifting our whole perspective on what’s fulfilling and rebuilding our habits around what works and what keeps us satisfied. It’s something EVERYONE can do, without sacrificing freedom, flexibility and fun! Nothing tastes as good as healthy feels…..but many of my low SmartPoint re-makes come pretty darn close!! Lol!! As anyone who knows me or reads my posts knows undoubtedly, my 2 favorite food categories are dessert and appetizers! Today’s idea falls under appetizer and it’s TOP NOTCH, if I do say so myself! This flat bread rivals any restaurant for the incredible explosion of taste in each bite yet will only set you back 5 SmartPoints!! And that goes for all the MyWW food plans….it’s 5 Smartpoints on Purple, Blue or Green.
Darin and I often spend Saturday afternoons at one or two of the many wineries in central California. There is no shortage of wineries to choose from and I love the laid back, fresh vibe of sitting outdoors with Oakley and Ivy, listening to live music. Picnic lunches and snack as are encouraged and I have as much fun packing our food as I do when we get there! LOL! It’s sort of like day camping….Day Glamping, rather! Note my bamboo luncheon plates and cloth napkins in the photo below☺️
Anyway, back to the flat bread!! It’s is a terrific appetizer (or lunch) to take in the cooler because it’s just as good room temperature as it is hot out of the air fryer. If you don’t have an air fryer, you need one!! But you could use a toaster oven or even a full size over if it’s not too hot. That won’t cut it here in Fresno, until about November! Either way, I think you will agree…..this flat bread is the bomb!!
