Last Saturday night, Darin and I decided to make a nice dinner and eat in the dining room. We typically don’t use the dining room when it’s just us, but going on 3 weeks of sheltering in place, we needed a change of scenery from the kitchen and tv!! Shaking up the routine a bit turned out to be a lot of fun!
I’ve made a non negotiable commitment to myself to use this unique time/pause and get my weight back to where I’m most comfortable. I can control very little of what’s going on out there or when my boys will be able to visit next, but I CAN control what I do with myself and this rare opportunity to have so much time at home. So although having a stay home “date night” sounded fun, I was not going to let it derail me from my plan. I was determined to have an awesome meal, with great wine AND eat healthily! Mission accomplished, I’m pleased to share!
I concocted the twice baked potato recipe below from bits and pieces of traditional twice baked potato recipes I found online. Both Darin and I really enjoyed them! And that’s very fortunate because when I used 3 baked potatoes, I was not thinking it was really 6 servings, rather than 3! With only 2 of us in the house, we have had some nice twice baked leftovers in the days following!
I also want to note…I prefer to use fat free cottage cheese in place of the fat free, plain Greek yogurt. It works really well for this recipe.
