I love this recipe because it is the ideal meal to easily throw together on a Sunday, toss it in the fridge or freezer, and lean on it all week when you don’t feel like cooking! Not to mention it provides a day’s full of vegetables! A Win Win!!!
The two secret ingredients to this recipe are the Lipton onion recipe soup and dip mix, and the canned pumpkin puree. The Lipton mix provides ease of preparation, and great flavor, while the Pumpkin puree provides awesome nutrition, without you even noticing its in the soup! I mean seriously, you don’t even taste it!!
Now I know my recipe does not contain any beans or meat, but that doesn’t mean your’s can’t! This veggie recipe is a great base, and if you’re looking for some added protein, you can absolutely add your preference of meat or beans!

Terra's Super Simple Vegetable Soup
A super simple vegetable soup that is extremely healthy, easy to make, and stores well in the fridge/freezer!
3cupsPackaged Coleslaw mixShredded cabbage and carrots
14ouncesCanned pumpkin puree1 can
30.5ouncesCanned dice tomatoes with onion and garlic2 cans
1tablespoonGarlic-flavored olive oil
2cupsWaterAs much water needed to cover ingredients
Instructions
Sauté cabbage in garlic olive oil with the onion soup mix. I use garlic flavored EVOO to save time. Fresh garlic works great too. I make my soup in the instapot, a soup pot would work great too
Add all frozen vegetables. I mix up the variety but usually stick to frozen because it is less time consuming than chopping!
Stir Well
Add all canned ingredients
Cook on high pressure for 8-10 minutes
Once it cools, I store my soup in individual jars so I can grab and microwave easily at anytime
