Faux Fried Rice

OK—Be honest, doesn’t this look just like fried rice you’d order from a Chinese restaurant??? Well, it’s not! Miracle of all miracles, first, it’s almost 100% veggies and second, it’s so easy I made it myself in no time!
I’ve heard a lot about riced cauliflower but the process of “ricing” it myself was not appealing, so when a friend told me about the Trader Joes brand, I thought it was time I gave it a try and what better way to eat rice than fried??

Ingredients
- 1 Bag riced cauliflower
- 1 1/2 C Steamed mixed veggies
- 1 Egg
- 2 Egg whites
- 1/3 C minced onion
- 1 T Minced garlic
Instructions

Using non fat cooking spray, sautéed the onion and garlic till soft.

Stir in cauliflower and continue stirring as it sautéed so that it doesn't burn. It takes about 5 minutes for it to soften up like rice.

While that was going on, I put my steamer bag of mixed veggies in the microwave. I'm sure fresh veggies would work beautifully but I'm always in a time crunch, so this is more realistic for me.

Once the cauliflower looks like rice, add the steamed mixed veggies and crack the egg and egg whites in to the mixture. Stir until the egg is cooked through. I've also tried scrambling the egg separately and adding it to provide larger egg pieces. I like it that way best, but it's faster and easier to just add the eggs directly to the skillet and mix them in. Either way is good---your choice!

When it's cooked through, you're all set! Any protein could be easily added...shrimp or chicken are both on my list of things I want to try! I served it with soy sauce, of course!
