Hi Terra
I mentioned a couple of snacks I found with fruits or vegetables in the meeting today.
Here are the details…

Laughing cow light creamy Swiss 1 wedge
Water crackers (4)
Thin slices of pear

Baba ghanoush 2 tbs (whole foods)
Lentil chips with sea salt ( whole foods)

I also eat cauliflower with the baba ghanoush. All great with a glass of vino!

Thanks for taking the time to share your snacks with us. The taste of thin slices of pears (which are in season now, by the way, and wonderful!) with Light Swiss Laughing Cow cheese wedges is fabulous!! Great idea!! The possibilities are endless:-)

I had to look up baba ghnoush because I didn’t know what it was, so for any others in the dark too, here’s what I learned:

Baba Ganoush, which is often called caviar d’aubergines, is a tasty Mediterranean spread made from eggplant pureed with tahini, garlic, and olive oil. They say it’s easy to make (but I, of course, would rather buy it already prepared!) and even improves if made a day or two in advance. It is typically served with toasted bread or pita triangles.

Ok, everyone…that’s all I have for today. The wind is howling and it’s spitting snow flurries out there, so stay warm and try to keep the snacking under control!!
