BLT Salad

Forget the flimsy sandwiches and soggy lettuce, the BLT salad is having a moment!

This is such an easy and quick recipe to create, and it stores so well! I like to make a few of these layered, pop them in the fridge, and mix it all together when I’m ready to eat it. I also make sure to leave as much tomato juice from my fresh tomatoes as possible, so when I mix it together the juice thins out the mayo and covers the entire salad.

This recipe is also awesome because it leaves plenty of room for creativity! You can add nuts like pecans and walnuts for additional protein, avocados and salsa for a southwestern twist, or substitute the bacon for a different meat! If you’re someone like me who does not eat bacon (or meat in general), then I’ve got a ton of meatless substitutes for you!!!

Soy-based: Lightlife Smart Bacon, MorningStar Farms Veggie Breakfast Bacon Strips

Coconut-based: THIS Isn’t Bacon, Sweet Earth Benevolent Bacon

Wheat-based: Upton’s Naturals Bacon Seitan, Yves Veggie Cuisine Veggie Bacon

Other Options: Cool Foods Hickory Smoked Veggie Bacon Bits, Louisville Jerky Co. Maple Bacon (jerky style)

BLT Salad

Ingredients
  

  • Shredded Lettuce
  • 2 T Miracle Whip
  • 2 Tomatoes
  • 3 T Hormel real bacon pieces

Instructions
 

  • Fill the bottom of my glass dish with shredded lettuce. I buy my lettuce already shredded, but that's up to you.
  • Then I used Miracle Whip in a squeeze bottle and zig zagged about 2T over the lettuce.
  • Next I cut up two ripe tomatoes into small chunks, salt and peppered them to taste and put on top of the Miracle Whip layer, juice and all.
  • Lastly, I sprinkled 3T of Hormel real bacon pieces over the tomatoes.
  • I covered it and refrigerated for a few hours.
  • At lunch time, I took it out and mixed it all up like you would a 7 layer salad. The juice from the tomatoes and the lettuce mixes with the mayo and thinned it out enough that it coated the whole salad. The bacon pieces were crispy and gave it LOTS of flavor. Oh yum!
